Tiger Nut Flour Pancakes
2 eggs 1/4 cup Anthony’s Coconut Oil, melted 1/3 cup almond milk 1 tablespoon Anthony’s Coconut Sugar 1/2 cup Anthony’s Tiger Nut Flour 2 tablespoons Anthony’s Coconut Flour 1/3 teaspoon baking soda 1/4 teaspoon salt
In a mixing bowl, combine the eggs, coconut oil, almond milk, and coconut sugar; mix well. Add tiger nut flour, coconut flour, baking soda, and salt; mix well. Cook on a hot greased skillet in 2 tablespoon portions until golden brown on each side. Serve and enjoy!

Tiger Nut Flour Brownies
3/4 cup Anthony’s Tiger Nut Flour 1 cup Anthony’s Blanched Almond Flour 1/3 cup Anthony’s Coconut Oil 1/2 cup Anthony’s Coconut Sugar 1/4 cup coconut cream 1/3 cup Anthony’s Cocoa Powder 1/2 teaspoon salt 1/2 teaspoon Anthony’s Xanthan Gum Preheat oven to 350° Fahrenheit and grease a 8″x8″ glass baking dish.
In a food processor, combine tiger nut flour, almond flour, and coconut oil. Process until buttery. Transfer to a small saucepan and add coconut sugar, coconut cream, and cocoa powder. Heat and stir over medium heat until melted and mixed. Transfer to a mixing bowl. Add salt and xanthan gum; mix well. Spread evenly in prepared baking dish. Bake for 20-25 minutes. Cool, cut, and enjoy

3 tablespoons Anthony’s Coconut Oil 1/3 cup Anthony’s Coconut Sugar 1 tablespoon cinnamon
